I thought I would share with you the cookie recipe I make most often. They get eaten so quickly in my house, I have to make them often so it’s great that they only take 5 minutes to make.

You could vary the recipe, adding different ground nuts or dried fruit.

Cranberry and Cashew Cookies (Makes 14)

Ingredients

1 cup (100g) Cashew nuts

½ Cup Oats

¼ teaspoon Sea salt

½ teaspoon Baking powder

⅓ cup (75ml) Maple Syrup

⅓ cup (75ml) Tahini

1 tablespoon Olive Oil

1 teaspoon Vanilla Extract

50g Dried Cranberries

 

Grind the cashew nuts and oats in a food processor until they are a fine flour.

In a large bowl, combine ground cashews, ground oats, salt and baking powder.

In a smaller bowl, blend together maple syrup, tahini, olive oil and vanilla essence.

Blend the wet ingredients into the dry. Mix well and then stir in the cranberries.

Place heaped teaspoons of the mixture onto a parchment lined baking sheet and slightly flatten.

Allow space between the cookies as they will spread as they bake.

Bake at 160°C for 10 minutes until golden

Optional; Add orange oil and choc drops
